Semi OT: emulators on tv

Ok, I had the day off today, and I decided to do a little cleaning. I ran into a problem though, games are taking over my living space. In my small apartment I have 2 arcade machines, 300+ NES games, 100+ SNES games, 100+ PSX games, 75 DC games, 50+ 2600 games and all the accompanying systems. Controllers are sprawled all over the floor, and cables are everywhere. I am too scared to look behind my tv at the mess back there. Something has to give. Since the Arcade machines are not going, and I couldn't bear to sell off my systems and games, I thought up the following idea; box up my systems and games, and play emulators on TV.

I was thinking of building a box, maybe in a black desktop case, running a DOS GUI (AOS?) and SNES, NES, and 2600 emulators. I know how to hook up the controllers via the parallel port, but what about video? I want the video out to look as good as possible (so I wont defeat the purpose, and get the originals back out). So what are my options? TV out card? Scan converter? I did a search on the site, but didn't find much. This place has gotten so big though, I probably overlooked some stuff. Anyone with first hand experience? Like I said, I want it to look as good as possible. I am only working with a standard 27" tv with S-Video, but I can assemble an appropriate PC. Is it possible to get full screen and descent looking video on a TV?
