I have toyed with this idea for about 1,5 years now and made a prototype early this year.
It consisted of MAME, Nesticle, Genecyst, Zsnes and some other emuls.
I connected a 6 button joypad and used the front end GameLauncher wich is FAR more easier to understand than arcadeOS, plus it can be controled with a joypad and its got nice looks.
I used a geforce256 with tv out and it worked great. The only hardware hacking you had to do was to mount a "esc" and 2 more buttons so you could quit back to Gamelauncher and choose other emus/systems...
