If you look closely at the supported resoltions section, you'll notice that the 27" model doesn't support 800X600. Maybe you can live with Quake2 at 640X480, but the verticle arcade games don't do so well at that resolution. They won't be able to double size to fill the screen.
BTW, what kind of control setup are you going to use to run Quake2 on your cabinet? I'll be doing that at some point myself so I'm curious.
