Laminate vs Paint vs Contact Paper vs ???

For all the folks building (or rebuilding) their own cabinets. Any feedback on the best way to go for finishing the sides of your cabinet?

Took a look at some laminate at the hardware store today. Seemed awesome, except it was thicker that I thought it would be (~1/16"). Unless I find someone with a planar and thin down the wood in the cabinet, the T-molding will not cover both the edge of the wood and the laminate.

Has anyone dealt with this? How unsightly is it? Is there thinner laminate available?

How about alternatives like paint and/or contact paper? Any lessons learned out there?
