More info on this. Did some research and wanted to capture it for the archives.

Formica (formica.com) apparently makes laminate in many different thicknesses. Most common is grade 10, which is ~1.2mm thick. Grade 12 is 1mm thick, and grade 20 is 0.7mm thick.

Different grades are intended for different uses (high use, vertical, flexible bending, etc.) I ended up purchasing 3 sheets of the grade 20 black matte laminate for ~$45/sheet from the local home depot. Had to special order it since they only stock grade 10 (the thick stuff you need for a kitchen counter)

The 0.7mm thickness is quite acceptable (<1/32").
