You'll be able to play any game on a Standard Res monitor on MAME providing its height is not greater than 256, if its greater than 256 then the image has to be scaled down.
Some cards do have support for Interlaced modes, 640x480 for example, however you'd be restricted to a 30FPS update.
This covers about 70% of MAME games so you be okay.
