I have also found a way to map an 8-way as a 4-way within the MAME GUI... here goes:

By using the NOT parameter you can exclude adjacent switches from actuating. Lets take the UP direction... Under Input Config for this game under the MAME GUI.... look for the UP field. Select it. To get the UP field to be truly UP, you need to exclude the 2 adjacent switches (i.e., left and right).
To do this, select the UP field and then using your joystick, push UP then RIGHT and RIGHT again. The field should then read something like JS1 +Y not JS1 +X (basically up and not right). Select the UP again to exclude the LEFT switch and do the same thing by pushing UP, then LEFT and LEFT again. Your field should read something like JS1 Y+ not JS1 X+ or JSY+ not JS Y- (again, basically Up and not right if the right switch is actuated OR Up and not left if the LEFT switch is actuated).

I found this buried somewhere on a message board, could have been this one, but cant remember.
