I have a 'fighter jet' style joystick for the PSX which also has a throttle. It was great with Ace Combat 2. It was probably a PC product InterAct modified for the PSX, and was compatible with the not-so-popular Sony dual analog joystick (two big joysticks, no rumble) and the neGcon.
I looked inside and it had 4 regular pots (one was set to a useless sliding tab like the trim adjusters-I always wanted to build rudder pedals for it).
I haven't looked inside a dual analog pad, but it must have 4 pots for the analog stuff.
One of those sites dealing with building your own cockpit might have more info on hacking analog controls.

: interesting. Could you take the parts from an analog joystick with an analog trigger/button (for PC), and hook that up to the analog switches on the console gamepad, and mount that on your panel with the rest of the arcade joys and buttons?

: I don't even know if PC joysticks have analog buttons or not, but just mounting an analog joystick would let you use your arcade panel with N64 and PSX (Maybe saturn too). That would be pretty sweet.
