What about using analog parts from a PC joy?

interesting. Could you take the parts from an analog joystick with an analog trigger/button (for PC), and hook that up to the analog switches on the console gamepad, and mount that on your panel with the rest of the arcade joys and buttons?

I don't even know if PC joysticks have analog buttons or not, but just mounting an analog joystick would let you use your arcade panel with N64 and PSX (Maybe saturn too). That would be pretty sweet.
