Capcom 'slimline' res and 25in arcade monitors?

Just browsing around and saw my 1st picture of a 'squished' capcom res in a mame cabinet.

My qn is : When using ArcadeOS + Mame in a dedicated Acrade cabinet, can the resolution
(that most of the cps1 Capcom games run in) run full screen on the arcade monitor?

ie : no vertical gaps?

Is this something that we can 'tweak' ourselves?

Is this something that we should do to all the different resolutions available.?

Or is this automatic when using an ATI mach 64 based card?
ie : screen stretching to 640 x 480

btw : .. my arcade monitor is 25 in and yet to be hooked up.
