X-Windows adds a lot of ovehead to a Linux machine. The only way Linux is going to give you any noticeable benefits is if XWindows was disabled, which you can't do in order to run MAME.

You can put telnet and ftp server processes on your Windows box - it's not a problem. You can also ftp and telnet into the Windows machine while you're playing a game (though I'd definitely question the benefits of putting a machine into an arcade box if you're looking for something multi-user).

: runs on the console, in X-windows, on a Voodoo card, supports mice, joysticks, sound, yadda yadda. And there are loads of front-ends.
