I have the leafswitch sticks from Wico too, but I haven't had this problem. Since the leafswitch sticks from Wico don't have any kind of polarity to them, it really doesn't matter which prong you treat as the "ground" and which one you treat as the "signal", as long as the contacts connect when you move the stick in the correct direction. Hm.
When you say that you get "continual signals from both of the joysticks", what exactly do you mean? Are all four directions on both sticks sending signals out? Just one direction?
I would try this: Just take one of the sticks and only wire up one of the directions on it (say "up" for example). Does that work? If so, add another direction.
I'm totally guessing on this, but maybe your daisy-chained grounds are wired up wrong? You might want to look at that as a possibility.
