Im SO happy to hear you say this. I myself had thought of it, and sent a mail to a person in the mame team but alal, got no response :(

Anyway, I dont know if sprint is analouge or not, but mame may not emulate its analouge pedals due to the fact that they probably thought that people wouldnt have controls for them.
I thing mapping the ability to each pot is a great idea. It would work for several games... and make building, and configuring control much easier.
And Yes, pots from any analouge stick or generic pedels will work with mame.
If possible - have a dual setup. 2 Joysticks - for a total of 4 axis'es to play with :)
