I believe most games, used microswitches (all Sprint games I am sure did) for the accelerator (gas pedal) and brake, to find out if the arcade game used Analogue controls, run the game then goto Analogue controls section, and it should say +YAxis = Accel, -YAxis = Brake (I believe that is how Analogue system for brake/accel works, center = no input, +1 to +127 = Accel speed and -1 to -127 = brake speed).

Actually it looks like Mame hasn't supported Analogue control system (if Outrun did have Pots control), I don't think it would be too hard to change it to you the Y-Axis of an analogue joystick.

I have no idea how pots work at all, I've ordered Microswitch accel/gas pedal set, although might have been wise to get dual (both for a few quid more).
