Varying screen sizes in ArcadeOS on WG arcade monitor - can it be fixed?

Just got my 19" standard-res K7200 WG arcade monitor from HAPP! :-)

I hooked it up to my Matrox G200 (running Gx00VBE from
http://fuel.adsl.dk/G200.htm for full VESA3 support)
using a custom cable I made and it works great! (Had
to connect the H/V sync to the negative sync inputs on
the WG. I tried connecting them to the positive sync
inputs first, and it didn't sync up properly.)

Anyway, everything almost seems to be working. Using
the "test pattern" in ArcadeOS, I adjusted the size
using the controls on the WG monitor (H-SIZE, H-POS,
V-SIZE and V-POS) so I had a good picture, utilizing
as much of the screen as possible. Then I started
playing a few games, and depending on the resolution
of the game, the game would sometimes "overflow" off
the sides. (And NOT because I'm running a vertical
game on a horizontal monitor. I had "auto-rotate"
turned on.) Games like Centipede and Pac-Man would
use the screen differently -- when ArcadeOS's test
pattern looked nicely sized and centered, Centipede
would overflow. When I adjusted the screen for
Centipede, Pac-Man and ArcadeOS didn't fill the
screen.

Is there some way to compensate for this in ArcadeOS?
It is pretty much unacceptable to have to tweak
internal pots every time you switch games just to get
it to utilize the monitor effectively. And it is
really annoying to have different games utilizing the
screen real estate differently. :-(

Also, while I'm writing, I can't play any vector games
on the WG. The "Press OK to continue", "Press any key
to start" and the game itself are all "distorted"
near a small section of the top middle of the screen.
(i.e., I could only see a little section of what the
display should have been.) Any idea why THIS is
happening?
