I-Pac / Mame Key mapping

I am using the I-Pac and Mame .58 in pure DOS mode with ArcadeOS. I've set my control panel up with 2 8-way joys, trackball, 6 player 1 and player 2 buttons, start1, start2, ESC, Pause, Tab and volume.

The I-pac has extra buttons for player 1 and player 2 that I would like to use for the Tab, ESC, volume, Pause (1b7=volume, 1b8= tab, 2b7=pause, 2b8=esc)Can I make this change without reprogramming the I-Pac? If so how? Can I make the changes in the Mame.cfg or the ArcadeOs.cfg?
