I used 3/4" plywood for my cabinet; both sides sanded, believe it was labelled "paint grade", $25 per sheet at home depot. I wanted my cabinet to be around 20 years from now and was worred about the stability of MDF; the classic cabinets were made of plywood, AFAIK, and there's plenty of these still around. If you do use MDF, you will want to reinforce the frame with 2x4s to take the load of the monitor; not sure how it would hold up over time with a heavy vertical load (any MEs out there care to comment?)

For the holes, I used both a 1-1/8" hole saw and a 1-1/8" spade bit - the spade bit was much faster, but the hole saw did less damage to the backside of the hole. BTW, my control panel is made of 3/4" oak plywood.
