Also, I didn't go the Jamma route, I bypassed all that and interfaced the monitor and control panel directly. There is another website that has some info for a jamma connection using a SCART cable (http://www.mameworld.net/pc2jamma/arc_dc4.html).
My VGA hack is this: buy the Blaze DC Adapter (http://www.ebgames.com/ebx/categories/products/product.asp?pf_id=176053) trace the 31khz pin on the connector end to where it connects to the VGA adapter PCB (pin/wire 7 I believe) and cut it (or install a spsd switch). This will force the adapter to only output 15khz rgbhv. Hack a VGA cable and splice the RGBHV to your monitor inputs. Use the stereo out (with volume control to adjust line out distortion) for sound. You can find the DC AV pinout at www.gamesx.com.
This may also work for Jamma if you connect both H/V syncs to the composite sync input of the jamma connector (but don't quote me on it).
I guess an alternate solution would be for you to just use the VGA adapter normally and connect to your Scan Do converter.
The DC2Jamma page mentioned above has info for hacking the controls (pretty simple). I suggest hacking the Madcatz pads as they are easier with solder connections points on the back of the pcb (rather than trying to solder to the button contacts).
