I don't see many people into this field of byoac, but there are a lot of cockpit games you could do. Dreamcast is a perfect system for an arcade machine. There are tons of exceptionally good driving games for DC. A few:

SF Rush 2049
MSR
Crazi Taxi 1/2
Daytona 2001
Speed Devils
Tokyo Xtreme Racer
F1 Racing Championships

Also, Dreamcast is a great system for a lot of modern day arcade games.
