RJ45 and Cat 5 for swappable CP's?

Has anyone else thought of using or used standard ethernet cabling and couplers for a way of using quick connects and/or swappable control panels? Granted, with only 8 wires, you'd need a few for a CP with a lot of buttons or different kinds of controls, but the simplicity of it would seem to make sense.
