The difficulty of hacking SNES pads to arcade buttons and controls all depends on how well you can solder, just look at the examples page on hacking sidewinders and you get the general idea.
Why bother "gutting" a SNES system, just put it on a shelf inside, or follow the other persons reply and simply run a SNES emulator (and NES emulator and Genesis emulator and PSX emulator,etc)
