I was able to buy a mammoth (>1000 feet) spool of 20AWG stranded wire for eight bucks, so that's what I'm using.

The cables I'm using to connect my panel controls and coin door controls together (see my page) have much thinner wire... I'd say certainly no wider than 26AWG and probably even thinner than that. I'm having to strip extra-long lengths and fold the wire a few times to get it to screw securely into a terminal block.
