If you are using the arrow keys for your stick, just assign a the "~" to a button combo like "player1 start + buttonx". Then you can use the stick to adjust the volume. The only drawback to this is that you need to do it everytime you start a new game and it only works in MAME. As for where to put a real volume control, I seem to remember some of the real cabinets having them mounted on the top of the cabinet someplace. Out of sight, out of mind :).
