: 1. Do most people leave the TV intact in its plastic shell, or disassemble it like I've seen done with computer monitors? I haven't seen too many project pages which use TV's, and on those I did see, there hasn't been much detail on how the TV was installed in the cabinet. If the shell is removed, can you get extra viewable area, like you can on many CRT monitors?

I've done it both ways. I left my TV intact, since I planned to take the cabinet apart when I moved. But gutting the TV and mounting the tube directly adds to the stability of the cabinet. It won't really give you any extra screen area, since most Svideo out cards don't overscan the image anyway.

: 2. Are there games for which televisions just don't provide adequate resolution? There seem to be some games in the 640 and even 800 lines range in one direction... If I remember, TV resolution is 512x384 or something right? I would imagine these games look somewhat crappy on a TV... Any experiences?
Viewable res is a bit higher than that, but if a game requires a higher res to run then you won't see the finer details. The windows desktop looks worse on a TV than any game I've tried.

: 3. Finally, any recommendations on some compact 25" or 27" TV's with S-Video input would be appreciated. I found some old messages with some suggestions, but most people don't include model numbers. I plan on hitting the local stores, but if anyone has any recommended models, I'd appreciate it.
Can't help you there. It's been over 2 years now since I got mine, and all the models have changed.
