I shortened the cables and at the same time I noticed that two of the connectors on the new joystick to be mounted were wired so that once "switched" it would stay in an "on" position (ie: auto repeating).

I took the two offending switches out and soldered wires onto the other available switch connector which ended up producing just one letter when switched to (unless you hold the joystick over).

Wired everything up and all works great! Problem is I am not sure if it really was the length of the cables or the incorrect wiring on the two directional switches that was causing the erratic behaviour of before.

The joystick purchased for mounting was setup with a PC joystick connector so maybe PC joystick inputs don't care if it receives the "On" or "once only" signal?

Maybe some helpful info for those who experience similar problems to check for incorrect switch wiring and cable length when using keyboard hacks.
