There is one easy way to find answers to that kind of questions - Use my program SortInfo!
1. Load listinfo from MAME
2. Select the "Input" tab
3. Sort on "Control"
Now it's easy to find information like:
"Sprint" = dial (360)
"Out Run" = stick (analog)
"Datsun 280 Zzzap" = paddle (?)
