I will assume that you will not want to dual boot the system you are talking about.
First edit your MSDOS.SYS and change the line bootGUI=1 to bootGUI=0. This will keep windows from coming up.
All you should have to do next is add "arcadeos.exe" to your autoexec.bat. Keep in mind that you will have to load the mouse driver and any sound drivers you will need to get sound working under dos.
