Well it wouldn't be hard to convert, as most people just gut the cabinet, and leave the monitor.
One word of warning, I think Virtua Fighter is a Med Res monitor 25khz, I am not sure if it is dual sync for 15.75khz (used by MAME Arcade modes), so it might be a bit of a problem there, like waste of £250 then.
