I'm familiar with the dual shock pad (I have a 3rd party one, not the sony one, though)
and I have a similar arcade stick (on that same site you listed, the PS Arcade by Interact).

As I understand: you want to be able to use the analog stick but with the arcade-style buttons?
The problem with trying to rip the analog stick out of the pad and wiring it into the Ascii stick
is that there's nothing to wire the analog stick to inside the Ascii stick electronics as far as I know.
But, you might be able to do the reverse - wire the Ascii arcade buttons to the dual shock's buttons.
You could even wire the Ascii stick to the dual shock's D-pad.
It would probably be messy, but you'd be wiring every connection on the Ascii stick to the appropriate connection
on the dual shock pad. Finally you'd have to mount the dual shock on the Ascii stick into a useable
position for the analog stick.
Then, you'd be plugging the dual shock into the Playstation, not the Ascii stick.

Does this make sense?

You might actually be better off building a custom controller by wiring
arcade joystick and buttons to a Dual shock Pad.
One thing I was wondering about was if there was any arcade joystick from Happs that could be used
for the playstation's dual shock analog stick for this kind of project. I believe the NFL Blitz
arcade machines have some kind of analog joystick (the 49-way stick, see below) but I don't know
if it would be 'connectable' to the dual shock's analog stick.

How would you use the dual shock analog stick? holding it with your fingers like a mini-joystick?
I'm guessing using your thumb or holding the controller like that causes you problems.
