I don't think theres much of a difference in feeling between a keyboard hack and a joystick hack. For my project reliability has been more of an issue. My first keyboard hack had ghosting and buffering problems. Dual joysticks with just a few keys from a hacked keyboard has been much better.
In my opinion the two most reliable control methods are a specially designed keyboard encoder (Hagstrom,) or a dual joystick combined with a hacked keyboard matrix.
No matter what you use, make all your connections thru terminal blocks. Being able to make changes later is very important.
