I don't think theres much of a difference in feeling between a keyboard hack and a joystick hack. For my project reliability has been more of an issue. My first keyboard hack had ghosting and buffering problems. Dual joysticks with just a few keys from a hacked keyboard has been much better.
In my opinion the two most reliable control methods are a specially designed keyboard encoder (Hagstrom,) or a dual joystick combined with a hacked keyboard matrix.
No matter what you use, make all your connections thru terminal blocks. Being able to make changes later is very important.
Good luck!

: Everyone here has come up with some ingenious methods for creating our controllers
: and cabinets... and all the guts are different... but I was looking for people who
: have tried multiple input methods and what "feels" the best. Do keyboard controllers
: respond better than hacks or are joystick hacks more playable. I think the most
: important thing about any of our projects is that the controls and gameplay feel
: right. For those of you with the real arcade collections.. how does the gameplay of your
: arcade controls compare with your real machine? Maybe this information could
: help others who are debating making controls settle on a input method to start with.
: Any Thoughts?

: Thanks for the info guys!
