No matter which method you choose, there will be some learning curve, and possible problems.
The best thing is to choose one Mame executable, and one front end - and stick with it. After a bit, you'll learn the caveats of each and how to deal with them.
Personally, I choose to use MS-DOS, MAME DOS, and ArcadeOS. With the newest version of AOS, you can reporgram the keys to be what you want, it automatically updates the game list, and supports a ton of options.
