The pushbuttons you describe sound alot like the Happ Controls Competition Pushbuttons found at http://www.happcontrols.com/amusement/pushbutts/5896xxl.htm.

The joysticks could very well be Perfect 360 joysticks (http://www.happcontrols.com/amusement/joysticks/50608300.htm) as those wouldn't make a click sound. One thing you might want to keep in mind is that once your joysticks are mounted in the cabinet and there is some noise around you (game/people sounds) it's rather hard to hear the clicking. The Perfect 360 sticks do cost quite a bit and add to the complexity of the wiring.

Happ also makes a Perfect 360 button which I would imagine has a very smooth feel and they seem to have a convex top to them.
