I run MAME and MESS in my cabinet with a PC monitor. As for why, well MAME goes without saying, but MESS I like because it supports such a wide variety of old systems. As console emu's go it is still not as good as some of the stand alone emu's out there, but it is growing and I would like to see it become as big as MAME someday...imagine every arcade game in MAME and every other game in MESS...hehe
