You might want to consider an Asus CuBX with a celeron 566. We have tried one out at work and were able to get it to run stable at 850MHz with a core voltage of 1.75V.
This Asus board supports UDMA-66, uses the socket-370 connector (FC-PGA), as well as bios-adjustable clock, core voltage settings.
Check out www.anandtech.com for an in-depth article about this particular CPU and overclocking it.
It is based on the new copermine core, using their 0.18u technology - lots of headroom with this guy!
We bought our Celeron for $170.00 locally. I have also seen it listed for this price on pricewatch.com.
