I'm personally using some 22 gauge wire that I ordered from Digikey. It seems a bit like overkill, but it generally works fine. To connect to my encoder (KE72-T) I am using a simple IDE cable to connect to a breakout board of sorts. The breakout board is just a smallish piece of breadboard with a 40-pin connector on it. I've got easy-to-follow traces on the board so I can solder the leads from the actual buttons themselves to the board. This makes the encoder very easy to remove from the control panel as it connects with a simple 40-pin IDE cable. I'll have some pictures up soon. Hopefully I'll be wiring the control panel itself this weekend.
