: There are 3 connectors on each button switch. I know 2 are for the 2 different assignments from my keyboard matrix that will make a certian key. But what is the 3rd connector? Ground or something?

There are two ways of wiring a button, each uses
two of the three connectors-
1 - Normally Open (uses ground and NO)
2 - Normally Closed (uses ground and NC)

For video games you want to use Normally Open. This means the circuit is only completed when you push the button. I'm not really sure of a good use for the other way which would only break the circuit when you push the button.
