Just build one in, the problem will solve itself:
Every monitor reacts in this manner to the change of (earths) magnetic field. It needs to be degaussed after every change in magnetic field.
Try turning it on it's back and THAN switch it on.
A monitor will automatically degauss when its switched on when it's cold, so it should be switched off for at least 15 minutes before that.
(It might take a few of these cycles before your picture is perfect again)
I'm planning on building a cocktail cab too, so please show us some pictures/stories.
