Ummm, if I am understanding you right you want to just have 1 cable coming out of the box for multiple systems, right? Get yourself a 4 position DB25 or Centronics switchbox. It will have 4 inputs and 1 output. Hook your main cable from your controller to the output. You will have to put your encoder and hacked gamepads in the controller also. Now, use an input from the switchbox or each set of controls that you have. With a turn of the swithc you can go from PSX to PC.
