An analog signal can look the same whether it's based around 5 volts (like a 2 volt peak-to-peak amplitude sine wave that reads from 4V to 6V) or 0V (like a 2 volt peak-to-peak amplitude sine wave that reads from -1V to 1V). The Playstation may base its video signals around 0V while the monitor expects the signals to be based around 5V. Adding the capacitors 'couple' the two systems so that the Playstation's signal will end up matching the reference voltage of the monitor.
