1 and 1/8 has been OK for all the joysticks I have tried (of course that is only two) But I think the actual recomended size is 1 and 1/4 inch.
If I recall correctly you are using Happ ultimates? if so then these sticks are ment to be installed by removing the "stick" from the body and putting through the hole that way. Of course if you are using a cheesy one peice euro-stick like me then you will have no chouce but to drill a bigger hole.

If the hole is only slightly too small try enlarging it with a router (for wood) or a round sided file (for metal)
