I can't think of how many dual trackball games that hit the arcades (now doubt MAME will support more and more). Although Sonic Arcade always come to mind (give it a year and maybe we will see it in MAME), but I guess we can use the Dual mouse support for Lightgun games, games that require more than two optical wheels, but I guess what most people will enjoy is the fact they can play rotatary games in two player mode (I can imagine offices all around the world, where old matey has pulled his mouse out and pluged it in to mateys down the hall).. hehe
