You should use the NO (normally open) and common connections on the microswitches from the Happ's joystick. You should see traces of copper under the buttons and directional pad on the gamepad circuit board. Normally, when you press a button on the gamepad, it shorts those traces together. You'll want to connect the microswitches on the Happ's joystick to the pairs of traces on the gamepad circuit board. This is so that when you use the Happ's joystick, you'll be making the connections that the directional on the gamepad normally makes. If you run wires to both sides of each pair of connections on the gamepad, it won't matter which side you connect to NO and which side goes to common (as long as you don't connect all of the commons together). To figure out which microswitch to connect to which pair of traces on the gamepad, work the Happ's stick and see which microswitch it touches. For example, when you press up on the Happ's stick, look at which microswitch is pushed underneath and connect that to the pair of traces on the gamepad PCB that would get shorted if you pressed up on the gamepad directional.

Soldering wires to a gamepad can be very tricky -- it's easy to ruin the copper traces.

Good luck :)
