This PS2 Faq on DailyRadarUK says a few PS2 games will recognize USB keybards and mice but not all-they have to be programmed for it.
It mentioned Unreal Tournament will recognize a USB keyboard, and Silent Scope will recognize a USB mouse.
It also mentioned there's a PS2 version of BASIC on a UK demo disk which will recognize a USB keyboard.
I don't have a PS2 so I can't confirm anything, but I'd guess most games will not work with an IPAC/keyboard.
