Yes... I would use 2. You can will feel the approximate sensation of the source. Also, if you press both left and right flippers at the same time - or nearly the same time... it will be more true to feel.
Actually I think its called a Knocker. When you win an extra game in most pinballs - you hear a loud smack sound - thats the knocker. Of course - you could most likly use any coil thats strong enough... or Maybe even a strong set of motors with a sping return lever...
