As far as I know most arcade monitors wont except composite input, but games like Dragon's Lair used a NTSC to RGB convertor board so they could connect the laserdisc to the arcade monitor. But since you would have to go from S-video to Composite to RGB using several convertors the picture quality probably wouldn't be that great. It may be less trouble and less money just to use a TV in the cabinet and connect directly to S-video, which looks a lot better that composite anyway. Hope I was helpful. BTW, I am no expert so you may want to get a second opinion :)
