Look at the console controller adapters. I don't think that any involve an IPAC though.
Are you looking to do this because you want the most realistic experience on your emulator or because you don't like PC gamepads? The only console gamepad that I like better than the PC Sidewinder gamepad is the PSX Dual Analog Shock.
