MAME Graphics Quality?

I've been wondering if I'm doing something wrong or if the graphics are as good as they can get on some MAME Games.

I'm using AOS in my cabinet right now on a 19" PC Monitor in Win98 with DOS MAME and a Geforce 2 MX card. Simple older games look great, but the more advanced games like NBA Jam and Mortal Kombat just look very pixely and blocky when I run them full screen, and not nearly as good as in the arcade.

Am I doing something wrong with my MAME config or do I have bad hardware or something? I'm trying to get the most out of the machine (A Piii-733 by the way) and I wonder if I can't make these things look better.

Any thoughts?
