I think you contacted me with this question a while ago, but I can't find your message. Anyhow, the Konami cabinet I have is a pretty tight fit. There's room on the sides, but because of the way that the monitor chassis drops down into the cabinet, there's no way that a larger monitor would fit without some modifications. On my machine, you install the monitor by placing the bottom bracket onto a wooden frame. Then the top tilts back into place. The top bracket clears the piece of wood with the speaker holes by less than an 8th of an inch. There are even notches cut into the top part of the frame to allow the two chassis supports to slide in. I'm not sure about the exact dimensions on the sides, but based on what I remember there was some extra room there.
By the way, using a 25" arcade monitor wasn't too much of a hassle, but if you can get your hands on a 27" VGA... go for it!
