i've used 1 inch hole saws to put holes in refridgerators for beer taps. it takes a good 5 minutes or so for each hole. use a slow drill speed, moderate pressure, and oil. make sure the saw is rated for metal. if the oil starts to smoke, then stop and let it cool down.
i found 1 1/8 inch holesaws at ACE hardware.
