you could use plastic laminate. it's the stuff they use on kitchen countertops. it's like 1/32 inch thick. you buy it in sheets, and glue it to the surface with contact cement. the best way to trim it to fit (after gluing) is with a laminte cutting bit, but you can do a decent job with sharp jig-saws and files.

you could also use an epoxy finish (from a marine supplier) or that pour on stuff that they seal flowers into and use on bar tops.

the last idea might be the best, because you could print instruction cards and the like and seal it underneath.
